Adhere to safety guidelines to prevent cross-contaminations. Maintain inventory and records of food, supplies and equipment. Clean and inspect sushi-bar and work area. Prepare and make sauces for the dishes on the menu. Determine size of food portions, estimate food requirements and costs, and monitor and order supplies.
